: : THE GUIDED VISIT TO THE MUSTARD MILL

As the Fallot Mustard Mill has managed to preserve its historical heritage intact, it has decided to share all the private aspects of its craft with mustard enthusiasts. For Marc Désarménien, this project was born out of "the ever increasing requests from both French and foreign customers who knock on our door and ask to visit the factory".

"We wanted to create an area dedicated to traditional manufacturing methods in order to present the technical heritage of the craftsman mustard maker’s art, something we have been able to follow from generation to generation".

During this journey of discovery, you will find, hidden away in the Napoleonic building which housed the original mustard factory, jars, table mounted sieves, old drive belts, winnowing machines, and above all mill stones, all of which bear witness to the skill and know-how of the 19th Century craftsman.

There is no question, however, of succumbing to nostalgia. Thanks to the intervention of the C.R.C.M’s experts, the museography enter attached to the University of Burgundy, to make it interactive, the tour use all of the latest technology :
- in one room, the lights are controlled by infrared as the visitors move forward,
- in another room, an image wall reproduces the movements of today’s mustard maker,
- a 3D animated model shows how the raw materials are brought down from their storage area (located in the attic) to the packaging area located on the ground floor,
- great chefs of today like Paul Bocuse provide a commentary to the visitors through the medium of interposed video terminals.


To retain the educational nature of these visits, they are only carried out in small groups of a maximum of 20 people, and are hosted by professional guides. The reduced size of the parties gives everyone a chance to try to make their own mustard and taste it at the end of the visit.
