小牛头肉配费洛(FALLOT)龙蒿味芥末酱

熟小牛头肉卷 4片
紫色马铃薯 2只
RATTE(品种为形状瘦长的)小马铃薯 2只
鹌鹑蛋 4只
续随子,酸渍小黄瓜,番茄干,盐,胡椒,蛋黄酱,费洛(FALLOT)龙蒿味芥末酱,黄油,鸡汤或牛肉蔬菜汤适量

将RATTE(品种为形状瘦长的)小马铃薯和紫色马铃薯分别用英式烹饪法煮熟(即在锅内的开水中加2%的盐,把切好的蔬菜在盐开水中焯熟后,滤掉开水,并将蔬菜放入冰水中迅速冷却)
将鹌鹑蛋加水煮熟后去壳
在蛋黄酱中调入适量费洛(FALLOT)龙蒿味芥末酱,续随子丁,酸渍小黄瓜丁,另加盐和胡椒调味
另将熟小牛头肉卷与适量鸡汤或牛肉蔬菜汤,黄油在锅中加热,并加盐和胡椒调味
将加热后的小牛头肉卷装盘(请参照图片),并在每片肉卷上放上两种马铃薯,续随子,番茄干丁,鹌鹑蛋以及酸渍小黄瓜
在肉卷旁放上适量酱汁,并用番茄干与酸渍小黄瓜在酱汁上作点缀后即可享用
